
I started sharing recipes lately which I have been enjoying and you all seem to be loving as well! These Cinnamon Cottage Cheese Muffins are delicious, simple to make and gluten free. I personally do not like cottage cheese, but I make an exception for these yummy muffins!

Ingredients
cooking spray
1 1/2 cups old fashioned oats (quick cook oats also work)
1 cup low fat cottage cheese (I prefer low fat but you can use whatever variety you wish)
2 eggs
2 Tbs maple syrup (you can substitute with honey or your favorite sweetener)
2 tsp vanilla extract
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp pumpkin pie spice (you can substitute with nutmeg)
1/4 tsp salt
1/2 cup dark chocolate chips (optional)
Directions
- Preheat oven to 350 degrees.
- In a blender, blend all ingredients except chocolate chips.
- Stir in chocolate chips (if using).
- Spray a muffin tin with cooking spray.
- Pour the mixture in the muffin tin, filling about 1/3 full.
- Bake for 25 minutes.
- Let cool, then enjoy!
