Gluten Free Dark Chocolate Peanut Butter Oat Cups (A No Bake Recipe!)

This is another family favorite recipe you’re going to love. I make these at least once a week because we all eat them up so quickly! This gluten free, no bake recipe is simple and delicious.

Ingredients

cooking spray

2 1/2 cups old fashion oats

1/2 cup honey

1/2 cup peanut butter

1 tsp vanilla extract

1 1/2 cups dark chocolate chips

1 Tbs coconut oil (optional)

pinch of sea salt (optional)

Directions

  1. In a large mixing bowl, mix together the oats, honey, peanut butter and vanilla.
  2. Spray 12 cups of a muffin tin with cooking spray.
  3. Firmly press the oat mixture into the muffin tin, filling half way.
  4. Melt the dark chocolate on the stove, adding the coconut oil for a creamier texture.
  5. Poor the melted chocolate over the oat mixture.
  6. Add a pinch of the sea salt to the top of the chocolate.
  7. Place muffin tin in the refrigerator until cooled, about 1 hour.
  8. Enjoy!
