Strawberry Pie- My Favorite Summer Dessert

Hey, y’all!  Do you want a refreshing dessert that tastes like Summer?  Then you need to try this strawberry pie recipe!  It’s simple, delicious and makes for a perfect warm weather treat.

I originally found this recipe here from Kumi Dreams and tweaked it a bit to make it my own.  This recipe is great for the 4th of July so I substituted the heart crust with stars- doesn’t it look patriotic?! 🙂  Here’s the recipes below:

Strawberry Pie

  • 3-4 cups of strawberries, cut into chunks (about two standard sized containers)
  • Frozen pie crust
  • Pillsbury pie crust
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 3 tablespoons cornstarch
  • 1 egg yoke

In a large bowl, coat the strawberries with sugar.  In a medium saucepan, bring the strawberries, water and cornstarch to a boil over medium heat, stirring occasionally. In the meantime, cut the Pillsbury pie crusts with the star cookie cutter- I use both crusts.  Let the strawberry filling cool and the pour into the pie shell.  Brush the pie crust edge with the egg wash.  Start to place the stars along the edge of the crust, pressing firmly into place, moving toward the center until the top is covered.  Brush the remaining egg wash on top of the stars.

Bake at 425 degrees for 20 minutes- the crust should be golden brown.  Let cool and enjoy.  Try adding a scoop of vanilla ice cream to make it extra delicious!
