Chocolate Chip Granola Bars (Gluten Free!)

Another family favorite in our home! These chocolate chip granola bars are simple to make, super yummy and are gluten free! Here’s the recipe:

Ingredients

3 cups old fashioned oats (quick cook oats also work)

3/4 cups peanut butter (or your favorite nut butter)

1/3 cup honey (you can also use maple syrup)

2 eggs

1/2 cup dark chocolate chips (optional, you can also use regular chocolate chips)

Directions

  1. Preheat oven to 350 degrees.
  2. Line an 8″x8″ pan with parchment paper.
  3. Mix all ingredients, except chocolate chips, in a bowl.
  4. Fold in chocolate chips.
  5. Press the mixture into the parchment lined pan.
  6. Bake for 17 minutes.
  7. Let cool completely, cut and enjoy!
