
Happy Monday, y’all! I love cooking- I take great pride in laying out all the ingredients on the counter and then whipping them up together for a delicious dinner. I read a blog post recently from Extra Petite about how they went to a lemon grove in Italy and had a simple but delicious pasta dish with a olive oil/lemon sauce and I thought to myself “I need to try that- it sounds so good!” A week later, Peter’s parents returned from Italy with real Italian pasta- it was meant to be!

I went to Pinterest and scrolled through few recipes before I found this one from Genius Kitchen. Again, this dish is simple and quick to make but it is sooo good! Here’s this recipe (with very slight modifications from me):

Lemon Garlic Pasta
3 tablespoons minced garlic (I finely chop up about 6 cloves of garlic for this or you can use the minced garlic from a jar)
1/2 cup extra virgin olive oil
6 tablespoons lemon juice (about 1 lemon)
4 teaspoons instant chicken bouillon
1/2 teaspoon pepper
1 lb pasta (I use linguini), cooked to the package instructions
1/2 cup freshly shredded parmesan cheese
1/4 cup finely chopped parsley
- Start the pasta by filling a pot with water anding a dash of salt, bring to a boil
- In a large skillet, cook garlic in olive oil until golden
- Add lemon juice, bouillon and pepper
- Cook and stir until bouillon dissolves
- Add cooked pasta and cheese to skillet with sauce, toss to combine
- Serve with a pinch of parsley on top

That’s it- how easy is that?! This dinner should only take you about 30 minutes to complete. I like to serve toasted French bread and a big salad with this meal- mmm tasty! What’s one of your favorite recipes right now?? I would love to hear your thoughts in the comments below!
